Pine honey is one of Greece's most characteristic honeys, and a large share of the country's honey is pine honey. Yet very few people in Denmark know it.
What is honeydew?
Pine honey is not made from flower nectar but from honeydew: a sweet sap from the pine trees, which the bees collect and turn into honey. The result is a honey that is darker, less sweet and more complex than blossom honey.
From Thasos
Our pine honey comes from the island of Thasos in the northern Aegean, where dense pine forests grow all the way down to the water. The island has been known for its pine honey for generations.
Taste and texture
The flavour is deep and earthy, with notes of resin, wood and caramel. The sweetness is mild, so it suits people who usually find honey too sweet. The texture is thick and velvety.
Crystallisation
Pine honey is low in glucose and therefore stays liquid much longer than most other honeys. If it does crystallise, that is completely natural and does not affect the quality.
How to use it
Pine honey goes well with Greek yoghurt, with cheese and nuts, or in a cup of tea. Its strong flavour also makes it great in dressings and marinades.
Our pine honey is raw and unpasteurised and is tested by independent laboratories before it leaves Greece.
