All about the honey Description, storage & shelf life

Raw & Unpasteurised Pine Honey from Thasos

On the island of Thasos in the northern Aegean, dense pine forests grow all the way down to the sea. Here the bees don't collect nectar from flowers. They collect honeydew from the pine trees instead, which creates a completely different honey: darker, less sweet and far more complex than ordinary blossom honey. For generations, Thasos has been known as one of the finest places in Greece for pine honey.

The flavour is deep and earthy, with resinous notes, a mild sweetness and a hint of wood and caramel. The texture is thick and velvety. Because pine honey is naturally low in glucose, it stays liquid much longer than most other honeys.

The honey is raw and unpasteurised, so its natural enzymes, antioxidants and nutrients are preserved. Every jar is a true taste of Thasos: pine forest, sea air and island summer.

Crystallisation is a natural process in raw honey and does not affect quality. Honey should not be given to children under 1 year of age.

Storage & shelf life

Opbevares ved stuetemperatur, tørt og med låget lukket – ikke i køleskab. Rå honning kan krystallisere; det er helt naturligt. Sæt glasset i lunkent vand (under 40 °C), så bliver den flydende igen.

From my kitchen

My 3 favourite ways

Greek yoghurt & walnuts

01 / 03

Greek yoghurt & walnuts

This is how I eat it most often: thick Greek yoghurt, a handful of walnuts and a generous ribbon of pine honey. The deep flavour is perfect with the tangy yoghurt.

Aged cheese

02 / 03

Aged cheese

A piece of aged gouda or pecorino with a drop of pine honey. My favourite with a glass of red wine.

Rye bread & butter

03 / 03

Rye bread & butter

A Danish-Greek breakfast: rye bread, cold butter and pine honey. Try it, it is surprisingly good.

Origin & harvest

Thasos, North Aegean

Harvested on Thasos, where dense pine forests cover the mountain slopes down to the Aegean Sea. This gives a dark, mineral rich honey with a robust, woody character.
